Our Favorite Chocolate Chip Cookies! (Gluten-Free)


Gluten-Free Chocolate Chip Cookies
Serves: about 36
Ingredients:

2 whole eggs

1/2 cup maple syrup

1 tsp pure vanilla extract

1tsp salt

1tsp baking soda

3 cups blanched almond flour (Costco’s is great!)

1/2 cup softened butter (1 stick)

(or melted coconut oil for paleo cookies)

1 to 1 1/2 cups chocolate chips (we like Enjoy Life chocolate chips)

Directions:

Preheat oven to 350 or 375 degrees (your usual cookie temp)

Beat together the eggs, maple syrup, and vanilla extract with a mixer

Add dry ingredients and mix together

Beat until well combined

Add softened butter or melted coconut oil and continue to blend until combined

Stir in chocolate chips

Drop a tablespoon of cookie dough on a parchment lined sheet or buttered pan

(I use my favorite cookie dough scoop)

Bake for 9-15 minutes* depending on pan and batch number

*I start out at 15 minutes with our stone pan then gradually reduce it each batch down to 10 minutes. Follow your usual cookie times and temps with your preferred cookie sheet. If you aren’t baking with stone, run and get thee some. A baker’s dream! My pampered chef pan makes the best cookies!

Transfer to cooling rack
