We celebrated our favorite guy yesterday! We updated his DAD picture frame with new pictures. Scroll below to see our DAD pictures from the past. We also whipped together some homemade waffles in our mini waffle maker. I used a recipe very similar to this one but omitted the pumpkin and cinnamon and added chocolate chips so the whole family could enjoy them. (My oldest doesn’t like pumpkin.) We keep holidays and birthdays pretty simple around here. Spending special days together as a family is usually our big gift to one another.

Banana Chocolate Chip Waffles (Gluten Free)
2 ripe bananas
1/2 cup almond butter
4 tbs melted butter
2 tsp vanilla extract
1 pinch of salt
1 1/4 cup gluten free waffle mix (we use Trader Joe’s)
OR 1 cup Paleo Mix (Birch Benders)
1/4 cup mini dairy free chocolate chips (ENJOY brand)
Mix wet ingredients
Add dry ingredients
Grease waffle griddle
We poured 1/4 cup of waffle batter in our mini waffle maker for 5 minutes.
(We sprinkle some chocolate chips on top of batter too before lowering lid.)
*Try 1/2 cup batter for 2-3 minutes on a regular sized iron.
Makes 10 mini waffles
