Pumpkin-Pecan Waffles (Gluten Free)

For Valentines Day, I bought the kids a mini waffle maker! We made some semi-homemade waffles inspired by the Paleo Waffles Nesting With Grace posted on her blog. I had some Gluten Free Pancake Mix from Trader Joe’s on hand so we subbed it in for the dry ingredients. The recipe on the box only makes 2 waffles! By adding a few more ingredients, we get 10 waffles instead of 2 and a lot more flavor and protein!

This little waffle maker heats up very fast! And can be used for grilled cheese, eggs, lots of things! We love it so much, I’m looking to get a 2nd one so more little hands can help… and get served quicker! 😉

I did not have pecans on hand when I took these pictures, but trust me… if you love pecans/walnuts in your banana/pumpkin breads…. you’ll love adding nuts to these!

It will also make your house smell like heaven!

Ingredients:

2 ripe bananas

1/2 cup pumpkin purée

1/2 cup almond butter

1 egg

3 egg whites (optional, we’ve done it with and without, both good)

1 tsp vanilla extract

1-2 tsp cinnamon (we do 2)

1 pinch of salt

3/4 cup gluten free waffle mix (we use Trader Joe’s)

OR 1/2 cup Paleo Mix (Birch Benders)

1/4 cup chipped pecans (optional)

Directions:

Mix wet ingredients

Add dry ingredients

Add pecans, stir

Grease waffle griddle

We poured 1/4 cup of waffle batter in our mini waffle maker for 5 minutes.

(We sprinkle some more pecans on top of batter too before lowering lid.)

*Try 1/2 cup batter for 2-3 minutes on a regular sized iron.

Makes 10 mini waffles
