We had our first real snow day this week! We love soup on a snowy day. I came up with this recipe over the holidays. I call it “chili stew” aka “what’s left in the pantry and deep freezer”. I was pleasantly surprised with how it turned out. And all of my kids loved the flavor. This “meat and potatoes” recipe is a great comfort food after a cold day. Frosty approves.

Chili Stew
1 lb beef
1 chopped onion sautéd with beef
1.5 tsp minced garlic sautéed with beef
1 can red beans not drained
1 can diced tomatoes
32 oz chicken broth
4 small potatoes cubed
1.5 tbs chili powder
1.5 tbs cumin
2 tbs sugar/honey (optional, helps mellow the acidity)
2-3 tsp salt
Simmer 30 minutes covered
