Sharing post from last October….
This week we brought the kids to a pumpkin patch and baked cookies for our neighbors. We gathered leaves from our yard to create leaf rubbings with a variety of crayons in fall colors. We then cut up the paper into gift tags to put on the cookies.
Old Fashion Pumpkin Cookies
Inspired by this recipe . I halved recipe and subbed honey and maple syrup for mine.
Cookie batter:
1 cup butter, softened (2 sticks)
1/2 cup maple syrup
1/3 cup of honey
1 egg
1 cup of pumpkin
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon of baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups of flour
Brown Sugar Icing:
1/4 cup of butter (1/2 stick)
1/4 cup of brown sugar
1/8 cup of milk
1/2 teaspoon vanilla
1 1/3 cup of powdered sugar
Ground cinnamon (optional)
Directions:
Preheat oven to 350
Beat butter, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Add egg, vanilla. Mix. Add pumpkin. Mix. Add flour. Mix
Drop a spoonful on cookie sheet lined with parchment
Bake for 10 minutes. Cool
Icing:
Warm butter and brown sugar until smooth on stove
Add milk and vanilla. Stir. Add powdered sugar. Stir
Frost or drizzle on cookies
Sprinkle with cinnamon suagr (optional)
