Mashed potatoes are an all time favorite of mine. A real comfort food from my childhood. We love them with the Chicken in Milk recipe. My mother gave me the great idea of baking the potatoes instead of boiling them. This is something her mother taught her. Since the oven is already on roasting the chicken, why not! I would think baking them instead of boiling them would hold in more nutrients too. Well, that’s what I tell myself to feel better about all that butter! I also think they come out with more slavor and fluffier baked instead of boiled. I want to try this with sweet potatoes next!
Mama’s Mashed Baked Potatoes ingredients:
- 8 baking potatoes
- Salt and pepper to taste
- 1-2 sticks of softened butter <we are a 2 stick family>
- 1/2 cup of sour cream
Directions:
- Rinse and scrub baking potatoes
- Pierce each one several times with a fork
- Lay side by side in a pan
- Cover pan with foil
- Bake at 375 degrees for 60 minutes
- Set out your butter and sourcream ahead of time or pop in microwave to warm/soften
- Remove from oven
- Peel skin or leave on, I like a little bit of peeling in mine
- Break up potatoes in mixing bowl
- Blend with electric mixer
- Add butter, mix
- Add sourcream, mix
- Salt and pepper to taste
- If needed, add additional milk/cream/seasonings and mix until desired consistency and flavor
